Simple Saturday - Hasselback Potatoes

Welcome to Simple Saturday!

Today I have a fun simple side for you ...

Hasselback Potatoes

Scrub baking potatoes

Stick metal skewers through the bottoms lengthwise
(so you won't accidentally cut all the way through the potato)

Cut thin slices all the way along the potatoes

Rub with olive oil

Slather tops with butter, minced garlic, and parsley
(I don't think the original version had garlic - I'm Italian, everything has garlic!)

Bake just as you would a baked potato

Wouldn't these look pretty next to a nice steak and some greens?
Eat and enjoy!

Visit me over at Seaside Simplicity for more simple recipes.

Have a great weekend!

I love these! We usually make them on the grill--I'll link up my recipe. =)

I had to stop by when I saw the pina colada dip. And it just might be time for good old tuna casserole too!

I've been wanting to try these. I hadn't seen the skewer tip before, that's a good idea.

I have made these before, and they are so easy and so spectacular for a presentation... great post and a really great tip on the skewers

I have been wanting to make these for ages, because of the look and for some reason, it is one of the recipes, I left to the side. Seeing yours, I am motivated to get moving.

They look great.

Chris and Dave - definitely use the skewers, I've tried without them and always end up cutting through the potato - ack!
Min - Thanks for adding the on the grill version!
Thanks for all the comments today everyone. I hope you'll let us know if you try them and how you like them. Enjoy the rest of the weekend!

These are heavenly. I used to put a wooden spoon next to the potato so as to not cut completely through them. I grated a bit of parmesan over the tops. Yum!
