A couple of weeks ago, Martha from Menagerie (and our very own Krazy Kitchen) added this recipe to Mr. Linky...and I KNEW I had to make it! I am a big lasagna lover anyway...a big pasta lover, for that matter. I crave pasta more and more as the weather turns cooler. This was a big, simple pan of comfort food that will keep in my arsenal...thanks Martha!
Fake it, Don't Make it Lasagnaslightly adapted from a recipe from Martha at Menagerie (seriously, this recipe is so versatile)yield: ~6 svgs.
~ 4 c. your favorite pasta sauce (homemade, jarred, canned)
1 bag frozen Ravioli (cheese, meat, veg), thawed or frozen...either will work
1 pkg. frozen chopped spinach (~12 oz), thawed and squeezed dry
~3 c. shredded mozzarella
freshly grated Parmesan cheese
Preheat oven to 350° F. Spoon about a third of your sauce over the bottom of a 9x13" baking dish. Cover with a single layer of ravioli. Top with half of the spinach and a third of the mozzarella. Repeat, ending with mozzarella and grating enough fresh Parmesan over the top to satisfy your cheesy urges. Cover with foil that has been sprayed on the bottom (to keep the cheese from sticking) and bake for ~25 minutes. Uncover and bake until bubbly, ~10 more minutes.

I may have linked the stratta post up before - I can't remember from day to day anymore! It's a great simple meal though and one of those that's great for stretching out meals and using up leftovers - almost anything can go in a stratta, it's versatile like pizza and soups :-)
I've made my own version of this many times and love it. Yours looks delicious!
